Easy Eats: Baked Chicken

Over here we are all about the easy weeknight meals. Favorites include this garlic chicken, this turkey basil stir fry and this sheet pan salmon. We also love a good chicken breast, either plain or chopped up in this pot pie pasta. The thing about chicken though, is that it can so easily go south. Like, is there anything worse than really dry chicken? Ugh, gross. IMO raw chicken is bad enough, so the end result better be heckin’ delicious!

As city dwellers, we don’t have a grill so we bake, roast or broil protein in the oven. After lots of research and testing, we finally have our baked chicken down to a science and it is perfectly tender and juicy after just 20 minutes.

The best part is that we mix up the seasonings and flavors for whatever vibe we’re going for! Our favorite seasoning combo is problably salt, pepper, oregano, chili powder, garlic powder, onion powder, paprika and cumin, but we also do regular old salt and pepper when we’re adding it to someting else or meal prepping.

For an easy dinner, grab some veggies and starches for roasting – we like sweet potatoes and broccoli. Pre-heat the oven to 350 and toss the veggies in for 15-20 minutes. Turn up the heat to 450 and then add the chicken breasts. Check the veggies when you flip the chicken – they will probably be ready!

Easy Baked Chicken

The most delicious oven baked chicken breast ready in 20 minutes!

  • 2 chicken breasts (you can add more breasts and it doesn't change the time!)
  • 1 tbsp olive oil (avocado oil works too!)
  • dash salt
  • dash pepper
  • other seasonings if desired
  1. Heat oven to 450

  2. Rub chicken breasts with olive oil and spices/seasonings

  3. Place chicken on a baking sheet – we like stoneware but anything works!

  4. Bake 10 minutes each side – add a minute or two (total, not per side) for larger breasts
