Easy Eats: Sheet Pan Salmon

Honestly, I think a plain ole’ sheet pan is one of the most underrated cooking assets – I use mine for everything, and it’s a must have for healthier meals in our home!

You can cook almost anything on a sheet pan – our favorites are lunches or easy dinners with salmon or chicken with veggies. If you’ve never done a sheet pan meal, a veggie roast is a great place to start – even if you don’t use them as a main course, roasted veggies make for a satisfying side or even snack when you’re in a pinch!

Typically I love to do a protein, starch and veggie – onions and/or garlic always add extra flavor. For this one, I combined salmon with baby potatoes, red onion, green beans and garlic. The key is to make sure that you time everything properly – starches and starchy veggies take longer to cook so I typically put those in first and then add the fish and less starchy veggies at the end!

An important note – we used the Trader Joe’s Mushroom & Company Multipurpose Umami Seasoning Blend and fresh garlic as our seasoning. I CANNOT say enough good things about this spice blend – C isn’t a huge fan of Mushroom’s and he’s obsessed with this! We put it on proteins, veggies and even pasta!

This easy peasy recipe takes about 45 minutes from start to finish – including prep – and doesn’t involve lots of that either! We used our favorite seasoning from Trader Joes, the Multipurpose Umami from Mushroom & Company. It’s a super versatile seasoning with different mushroom blends, mustard seed, pepper, thyme and a few others and the flavor profile is outstanding. We use it on meats, fish and even pasta! That being said if you don’t have this one it’s totally okay – try mixing up garlic powder, onion powder, thyme, pepper, salt and pepper flakes!

RANKING: 1! This is LITERALLY the easiest recipe of all time! It requires minimal ingredients, all of which can be swapped with whatever you have on hand!

Easy Seasoned Sheet Pan Salmon

A quick, easy and delicous meal for when you're short on time!

  • 2.5 lbs salmon (wild is best!) (adjust depending on how hungry you are – this allows for a little over 6oz per person)
  • 2 tbs olive oil or avocado oil
  • 4 cloves minced garlic
  • 2 lbs green beans (or other non-starchy veggie of choice) (typically 2 bags)
  • 1 lb baby potatoes, cleaned and halved (any small potato will do – red, fingerling, etc – just halve or quarter based on size)
  • 1 red onion, halved and sliced
  • 2 tbsp seasoning of choice
  1. Line baking sheet (or 2) with parchment paper or a silicone mat. Pre-heat oven to 375.

  2. Toss potatoes and red onion in 1 tbs of oil – add salt, pepper and 2 gloves of garlic (1 tsp minced)

  3. Line baking sheets with potato/onion mix and bake for 20 minutes.

  4. Remove pan and add green beans, mix and drizzle with 1/2 tbsp of oil. Shift potato/onion mix to the edges (as pictured).

  5. Add salmon to the center, coat with remaining 1/2 tbsp of oil, fresh garlic and spices. Bake for 15-18 minutes. 18 will give you salmon that is cooked through but still moist.

  6. Remove from oven, plate and serve!

DO NOT fuse about measurements and details. If you only have broccoli, great! If you don’t have garlic, no worries! Just make sure if you’re using potatoes or starchy squashes to do those first and then add the rest of your produce and protein so everything is cooked perfectly!
